Two more weeks of spring menus

Here are two more spring menus for you, featuring 30 minute meals that I’ve shared here on Busy Family Meals. Each week has 5 full dinners, 1 snack-style dinner, and 1 day left over for you to eat…well, left overs! Or to go out :-)
Click on each recipe that you decide to use, print yourself out a text file so that you don’t have to print all the pictures and extras, and create a shopping list based upon the layout of your grocery store. Week #1:
- Dilled baked shrimp and feta
Rice, orzo, or couscous
Spring greens salad with pesto vinaigrette - Leek and potato soup
Bulky rolls - Sardinian lamp and couscous with vegetables
- Baked trout with mushrooms
Focaccia bread
Spring greens salad with simple vinaigrette - Fried rice and ginger
- Falafel
Serve with pita bread, greens, and tahini
Week #2
- Super-fast stir fry with ground beef and fresh vegetables
Whole grain rolls - Red lentil curry
Basmati rice - Salmon with green sauce
Stir fried spring carrots and fennel
Rice, orzo, or couscous - Quick scallops and asparagus risotto
- Stir fried brussels sprouts and assorted fresh vegetables
Carrots with dill
Whole grain bread - Mini-pizzas with artichoke and sausage
