Question of the month: What’s your favorite sandwich for hot weather?

When it’s too hot to light the fire, sandwiches are a good option, but only if they’re good sandwiches! Otherwise, everyone ends up feeling kind of deprived. One of my favorites is to use previously roasted or grilled chicken. Now you can even buy pre-cooked rotisserie chickens at most grocery stores.
I slice up the chicken and slather either cranberry sauce or cranberry chutney on the bread…on both slices is best! Add a layer of arugula or other tasty greens to each slice, and then add the chicken slices in between.

I love turkey and cranberry sandwiches. Ok…my absolute favorite and I don’t make it we buy it out is a blackened halibut sandwich on sourdough bread. Yum!!!

Well, that’s pretty close to my chicken and chutney favorite! But a blackened halibut sandwich? Never had it…sounds great!

Those combinations sound great. I love taking a simple sandwich and adding a flavorful spread to make it outstanding. One of my favorite recipes is for the Onion and Garlic Classic Club:
Ingredients:
• 3 slices of sandwich bread
• ¼-pound deli-sliced turkey
• Santa Barbara Bay Caramelized Onion and Roasted Garlic Dip
• Iceberg lettuce
• 3 strips bacon
• Sliced tomato
• Sliced red onion
• 2 slices American or Swiss cheese
Directions:
1. Take two slices of bread and spread each generously with onion and garlic dip.
2. Add lettuce and bacon on top of the spread on both slices.
3. Place tomato and onion on top of bacon.
4. Top with turkey and cheese.
5. Stack one piece of bread on top of the other and use the final piece of bread to top the sandwich, creating a triple-decker club. Cut in half to serve.
