Mediterranean potato salad

Don’t dismiss this recipe if you’re not a fan of potato salad! This is a whole meal salad with potatoes, not a “potato salad”. It is incredibly delicious, and you can serve it warm or cold, so it will carry you over into the summer if you’d like. You can also serve it as a […]

Cheese, broccoli, and red bell pepper strata (OAMC)

Remember the Spinach Strata that we made? Well, how about substituting chopped broccoli florets and red bell peppers for the spinach? Add some parmesan cheese to the cheddar, and throw in a dollop of Dijon mustard…yum! :-)

Spinach strata (OAMC)

One of my very favorite egg and cheese dishes is any type of Strata. This one is delicious, with the addition of (preferably fresh) spinach. Using ricotta cheese instead of milk makes a heavier dish, but it also cooks up a lot faster and doesn’t have to be refrigerated overnight before baking like some recipes […]

Fettucini with blue cheese basil sauce

If you’re all concerned about fat content, then go ahead and use skim yogurt and ricotta…if you must. It will still be delicious, but it won’t match the creamy goodness of the original. Whatever you do, do serve this to your family, even if it’s not often! Add a salad and rolls, and you’re all […]

Carrots with dill

Here’s another special veggie recipe we had last week, along with the brussels sprouts: beautiful carrots with dill. These are prepared in a very similar manner to the brussels sprouts too. Wash, but don’t peel them, and slice them on the diagonal so that you have fairly thin ovals.
Carrots
Olive oil
Lemon juice or white wine
Butter
Dill weed […]

Cream of carrot soup

Cream of carrot soup is a wonderful comfort food! Never thought of carrots that way before? You will now :-) If you’ve got time during your once a week food prep to pre-cook the carrots, the meal will go even faster, but if not, it still clocks in under thirty minutes. The last time I […]

Cheesy scalloped potatoes

There are many variations on scalloped potatoes, but this recipe yields one of the cheesiest, creamiest, most decadent batch you can ever imagine! Great with ham or fabulous as a main dish :-)
Cheesy Scalloped Potatoes
4 large Yukon gold potatoes
1 large sweet onion
2 cloves of garlic, minced
1 c milk
1 c sour cream (not fat-free)
Salt & pepper
1-1/2 […]

Tasty brussels sprouts

A really tasty way to fix brussels sprouts has several variations depending upon what you’re doing for the rest of the meal. They can be ready to serve about 5 minutes, or you can finish them off on the grill or in a stir-fry for added kick! If you cut off the woody bottoms and […]

Fried rice and ginger

If you’ve pre-cooked some rice and edamame during your once a week food preparation time, this meal will go together in under thirty minutes! You can often find edamame already shelled and cooked in the freezer section. This is how I buy it when I can find it, since there don’t seem to be any […]
