Cheese, broccoli, and red bell pepper strata (OAMC)

Remember the Spinach Strata that we made? Well, how about substituting chopped broccoli florets and red bell peppers for the spinach? Add some parmesan cheese to the cheddar, and throw in a dollop of Dijon mustard…yum! :-)

Berry coffee cake (OAMC)

This coffee cake is the perfect make-ahead or OAMC treat! It freezes very well, and can be served either at room temperature or warm. Wrapped in foil, it goes from freezer to oven to table in about 30 minutes.

Spinach strata (OAMC)

One of my very favorite egg and cheese dishes is any type of Strata. This one is delicious, with the addition of (preferably fresh) spinach. Using ricotta cheese instead of milk makes a heavier dish, but it also cooks up a lot faster and doesn’t have to be refrigerated overnight before baking like some recipes […]

Chinese-style green beans (OAMC)

These beans can be made up in bulk as a OAMC vegetable and frozen for later. Don’t steam them for very long if you plan to freeze them. They also keep very well for a few days in the fridge, so they’re great to make ahead during once a week prep time. […]

Making basic risotto

Risotto can be made in large batches and either kept for a couple days in the fridge (no longer) or even frozen if you cook it to the barely al dente stage. No matter how complicated the recipe is that calls for risotto, the basics of preparation of the rice are basically the same. […]

Leek and potato soup (OAMC)

Serve immediately or freeze for later…or make a larger batch and do both! Since the potatoes are fully cooked and pureed smooth, you don’t have to worry about them breaking down in the freezer. I’m sorry that you have to peel the potatoes for this recipe, but if you don’t mind your soup […]

La Sita chicken - a perfect OAMC dish

La Sita Chicken is a great example of a recipe that is made for Once a Month Cooking. It takes some pre-cooking before it’s ready to assemble, and the actual cooking time is low and slow. But it makes enough for a family of 4 to eat twice, varying the accompaniments! It’s worth the time, […]
