I have mixed feelings about reviewing this book, because I don’t really like their method, personally. But that’s my opinion. Lots and lots of people have written in to Amazon and said that they think the book is brilliant, and the loaves it produces are delicious.
Let’s get one thing straight though: there is no bread in 5 minutes. There may be only 5 minutes of active time on a given day as you shape the loaf from the dough that you’ve pre-made and stored in your fridge, but there’s still rising time and baking time, so don’t be fooled.
The basic premise of this book is that you mix up large quantities of dough once in awhile, which fits in perfectly with our theory of OAMC or once a week food preparation. Then, without all the arduous kneading (which I happen to like!) or the tedious multiple risings, you form a gluten cloak around a wet dough. I just don’t happen to like this texture of bread, but many people rave about it.
You’ll have to decide for yourself :-)
