Baked trout with mushrooms

OK, honestly, this comes in at a 35 minute meal, but it is so stinking good that I have to share it with you anyway. It is so worth the extra 5 minutes! You can substitute salmon or other oily fish if you’d like, but we had this one last night with trout and it was amazing. I served it with focaccia bread and a very simple green salad (mixed greens and plum tomatoes only). You don’t want anything too fancy that will take away from the wonderful medley of flavors in the main event!

Baked Trout with Mushrooms

Olive oil
3/4 to 1 lb Trout
Salt and pepper
10 oz mushrooms (I used baby bella), sliced
2 cloves of garlic, minced
3 green onions, sliced thin
2 T parsley, minced
1/4 c bread crumbs or crushed croutons

2 T butter, melted
2 T olive oil
2 T lemon juice

Oil a shallow baking dish and make a bed from the sliced mushrooms. Salt and pepper your fish and place it on top of the mushroom bed. Top fish with the garlic through the bread crumbs. Whisk together the butter, oil, and lemon juice and pour it over top the fish and mushrooms. Bake for approximately 25 minutes at 375 until the fish is flakey.

    Great recipe!

    I have a similar fish recipe - sans mushrooms and bread crumbs. I think this can be done in under 30 minutes.

    Bake at 450 for 10 minutes per inch of thickness.

    That’s for those REALLY busy nights!

    LOL!! Yeah, it *can* be done in under 30 minutes, but I really don’t like cooking fish any higher unless it’s been pan-seared first. Eileen, I want to post your recipe here as a guest recipe…how about it? :-)
